Maple Ayam Merah

1. Rub the chicken breast with ingredient A and place in the fridge for 2 hours (or at least 30 min) to marinate. 2. Heat the oven to 200C, grease the pan and cover the marinated chicken with a foil and back for 20 -30 min. 3. Turn the chicken and bake uncovered for another 20 – 30 min until the thickest part of the chicken is cooked and set it aside. 4. While waiting for the chicken, grind all ingredients listed in B into a paste using a food processor. 5. Heat 2-3 tablespoon of oil in a pot, add in mince garlic and the ground paste. 6. Cook on medium-high heat until the oil surface. 7. Add in the onions and tomatoes and cook till they are soft. 8. Lastly sauté all the other ingredients listed in C. 9. Reduce heat to low, stirring occasionally for 20 minutes until the sauce thickens. 10. Place the baked chicken on a plate and pour the sauce over it. 11. Serve it with salad and a side of baked potatoes or pasta. Or serve it with rice like the traditional Ayam Merah ! |

2. Fill a ketchup bottle with half of the batter, lightly oil the pan with vegetable oil. Gently squeeze the bottle and make some swirl around the pan. When the batter is set, fold them in any shape of your choice. Serve warm with curry dishes.
